The Shima Kurobuta (black pig) Agu pork used in our restaurant is a native Ryukyu breed that is unique to Okinawa and is one of the three great black pigs in the world.
"Shimakuru" Agu Island Black Pig is very small in size, has a lot of fat, and has a meat texture with a moderate amount of red meat.
It contains the umami flavor found in fat, vitamin B1, and collagen, and is also good for beauty.
It is rich in unsaturated fatty acids, which have beneficial health benefits such as lowering cholesterol and thinning the blood.
The meat of the Shimane Kurobuta Aguu pig contains 2.5 times the umami components glutamic acid and amino acids compared to regular pork.
It has only a quarter of the cholesterol.
Enjoy the deliciousness of the tender, odorless, real Agu black pork, together with the fat and meat.
