The Agu pork we use at our restaurant is a purebred Ryukyu native breed, considered one of the world's three greatest black pig breeds.

Agu black pigs are very small, and their meat has a high fat content with a moderate amount of lean meat.

The fat contains "umami," vitamin B1, and collagen, which are good for beauty.

It has health benefits such as lowering cholesterol and thinning the blood.

The meat of the Ryukyu native black pig, Agu, contains 3.5 times more glutamic acid and amino acids, which are umami components, compared to ordinary pork.

It contains only a quarter of the cholesterol.
